My best friend wondervonnie posted a baking recipe (check it out here), where she made these delicious healthy muffins with berries. They looked so tasty I decided to get inspired by this yum yum and bake my own.
However, I didn’t really follow her recipe, because I realised I didn’t have all of the ingredients she’s using. 😦
You will get cca 12 muffins
You will need:
250 g all-purpose flour
100 g sugar
2 tsp baking powder
20 g vanilla sugar
200 ml milk (or 200 ml yoghurt and a bit of milk)
85 g butter
fruit of your choice (I used blueberries)
Preheat the oven to 160°C.
Firstly, grab a bowl and mix really well all the dry ingredients together (flour, sugar, baking powder, vanilla sugar). Then melt the butter in the microwave and add it to the dry mixture, together with milk (or yoghurt and milk) and eggs. Mix all of this well.
This time grab the muffin pan and put in the muffin cups. Add blueberries to each of the cups. Pour the muffin mixture into the cups and fill them almost to the top. Now add some blueberries on the top. Put the whole thing in the oven and bake for about 25 minutes.
Tip: You’ll know they’re done when you stick a wooden stick (haha, rhymed) into one of the muffins. If the stick is clear and there are no bits on it and it’s dry, the muffins are done.
